100% Ibérico Bellota Ham, Los Pedroches PDO (Whole piece)

All our hams and shoulders comply with the Ibérico Quality Standard (RD 4/2014) and, furthermore, in this case, are covered by the Los Pedroches Protected Designation of Origin, which is the only body that certifies that all phases of the process take place in the Los Pedroches region, from field production and acorn-based fattening during the montanera, to final processing and cellar maturation.

For a 100% ibérico bellota ham with the Los Pedroches PDO to be correctly labeled, it must bear the black Los Pedroches PDO flange/seal and a barcode on the back of the seal/flange, the number of which must match the number appearing on the Los Pedroches PDO vitola/label, which said organization provides us upon completion of the curing period.
