The German Simmental or Fleckvieh breed is a cattle breed descended from the Red Holstein. Large in size and with good conformation, it is characterized by its yellow fat. It is a dual-purpose breed, used for both milk and meat production.
Its characteristic flavor and ease of fattening, both intramuscularly and extramuscularly, are due to its high milk production.
With great depth of flavor, its main characteristic is the perfect balance of juiciness, taste, and tenderness.
We select the best Simmental specimens from the Bavaria region, specifically from the area near the Alps. The crossbreeding of the Fleckvieh (spotted) cattle in this region, along with the richness of its pastures and grains, provides us with loins of the highest quality.
AGING
GERMAN SIMMENTAL
The large muscular structure of the Simmental breed and its high intramuscular BMS index mean it does not require prolonged aging. Furthermore, its large size and fat quality allow us to refine it in search of a deeper meat flavor.
It is perfect for lovers of the classic flavor of mature beef.
Animals older than 8 to 14 years undergo long aging processes to achieve that flavor and tenderness.
Optimal aging of 30 to 45 days. (-8 years)
